Six to eight things from Chessenden and the Hunter, shipped four times a year. Honey, sourdough, native pepperberry oil, a candle, the season's recipe card, beef when it's in season. A story, not a butcher service.

In-house and collaborative makes. Limited runs. The workshop on the property is the back-of-house for a small, deliberate line of objects.

Collaboration with a Hunter Valley smith. Hand-forged carbon steel, hardwood handle, Southerly stamp. The knife the chef uses Friday night.

Made from sustainably-felled timber on the property. Each board signed, numbered, and accompanied by a card naming the tree and the corner of the property.
